eggless french toast casserole with cinnamon apples

Description

This vegan eggless french toast casserole is the perfect cross between an apple crumble and french toast. Two of my favorite things! Super simple, refined sugar free, and oil free. Perfect recipe for Christmas morning.

Ingredients

  • 6 small-medium apples, cubed (roughly 6 cups
  • 10 cups cubed stale, french baguette 

CUSTARD:

  • 16 ounces silken tofu 
  • 1 cup dates (soak to soften if needed) 
  • 1 cup apple cider 
  • 1/2 tbsp cinnamon 
  • 1/4 tsp nutmeg 
  • 2 tbsp ground flaxseed 
  • 1/2 tbsp tapioca starch

CINNAMON CRUMBLE TOPPING:

  • 1 cup pecans 
  • 1 cup oats 
  • 1 cup dates (soak to soften if needed) 
  • 2 tbsp maple syrup 
  • 1 tsp cinnamon

OPTIONAL: 

  • 1/4 cup, sliced, cold vegan butter for topping (I used the brand Earth Balance) 

RECOMMENDED TOPPINGS: 

  • maple syrup 
  • coconut whipped cream 
  • more apples!

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. 
  2. Cube the french baguette and chop the apples into bite size pieces. Add to a large casserole dish (9″x13″) and mix together to evenly combine. Refer to photos, as needed. 
  3. Next, make the eggless custard by adding all custard ingredients to a high speed blender until smooth. Once smooth, pour over cubed bread and apples in the large casserole dish.
  4. Next, in a food processor, combine the dates, pecans, oats, and maple syrup until well incorporated to make the cinnamon crumble topping. Refer to photos above, as needed! 
  5. Finally, crumble the cinnamon crumble topping over the casserole with clean hands. It is a bit stickier than a normal crumble topping but if evenly distributed over top it will be fine! 
  6. Optional: top your casserole with squares of cold vegan butter. 
  7. Bake for 55 minutes, or until top is golden brown. 


Notes

  • If your dates are super dry or have been refrigerated, soak them for 20-30 minutes in boiling hot water to rehydrate and soften them.
  • You could toss your apples in a bit of cinnamon as well if you’re a true cinnamon lover but I find that there’s enough cinnamon in the crumble topping and custard! 🙂 
  • I recommend putting a baking sheet below your casserole in case any of the custard spills out while baking.
