Description

These vegan peanut butter rice krispie treats are super simple, only 5 ingredients and require no baking! And the top fudge-y peanut butter layer is a must!

THE BASE

  • 3 cups rice Krispies cereal (unsweetened or lightly sweetened)
  • 1 cup natural peanut butter (the only ingredients should be peanuts and salt)
  • 6 tablespoons maple syrup
  • Pinch of salt if your peanut butter is unsalted

TOP PEANUT BUTTER LAYER

  • 2/3 cup powdered peanut butter
  • 1/3 cup coconut oil, melted
  • 1/3 cup maple syrup
  • Pinch of salt if your peanut butter is unsalted

Instructions

  1. To make the base, Mix together the peanut butter, maple syrup and a pinch of salt, if needed.
  2. Next, using a spatula mix in 3 cups of unsweetened rice krispies cereal until fully combined and coated so they will stick together.
  3. Press your rice krispie bars into a parchment lined 8×8 baking sheet until completely flat. Don’t be afraid to push down. You want it to be tightly packed so they stick well together.
  4. Move bars to the fridge and allow them to set for at least 30 minutes.
  5. After 30 minutes, whisk together the powdered peanut butter, maple syrup and melted coconut oil until completely smooth.
  6. Pour over the chilled bars and return to the fridge for another 30 minutes, or until completely hardened.
  7. Lastly slice into 9 bars. Optional: sprinkle with a touch of salt.
  8. Enjoy! Store leftovers in the fridge for up to 5 days.
