Cauliflower Potato Leek Soup

Vegan and Healthy!

1. Saute the leeks and onion.

2. Add riced cauliflower and potatoes.

3. Add vegetable broth and simmer for 25 minutes.

4. Blend soup until smooth.

5. Stir in 1 cup coconut milk.

6. Serve immediately with favorite toppings.
