30 Minute  Cheesy Vegan Potato Tacos!

with leftover mashed potatoes!

What You'll Need for Cheesy Vegan Potato Tacos

1. Add vegan cheese shreds and chives to your leftover mashed potatoes, if desired!

2. Wrap corn tortillas in damp towel and microwave until warm and pliable. 

3. Stuff the corn tortillas with mashed potatoes (about 1/3 cup). Fold in half. 

4. Place the tacos on a baking sheet and brush both sides with oil! Bake for 20 minutes!

Serve with shredded cabbage, vegan sour cream, guac and more! 

Try it with a frozen Strawberry Margarita, too!
