To make the rice krispie bars, mix together the peanut butter, maple syrup and a pinch of salt, if needed.
Next, using a spatula mix in 3 cups of unsweetened rice krispies cereal until fully combined and coated so they will stick together.
Press your rice krispie bars into a parchment lined 8x8 baking sheet until completely flat. Don't be afraid to push down. You want it to be tightly packed so they stick well together.
Move bars to the fridge and allow them to set for at least 30 minutes.
After 30 minutes, whisk together the powdered peanut butter, maple syrup and melted coconut oil until completely smooth.
Pour over the chilled bars and return to the fridge for another 30 minutes, or until completely hardened.
Lastly slice into 9 bars. Optional: sprinkle with a touch of salt.
Storage: Store leftovers in the fridge for up to 5 days.
Notes
If you cannot find the specific Rice Krispies brand cereal, any plain brown rice cereal should work.
