Add ingredients to a bowl or jar and whisk together until completely smooth.
For Spicy Vegan Chipotle Honey Mustard:
Add all ingredients to a bowl, including two finely diced chipotle peppers in adobo sauce. Whisk together to combine.
Add additional adobo sauce to taste.
Storage
Store this dressing in an air-tight glass container for up to two weeks. Note that storing in plastic will make it go bad faster.
Notes
If you generally prefer less sweet sauces and dips, I recommend adding the sweetener 1 tablespoon at a time and tasting as you go to make sure you don't over sweeten.
For oil-free version: Substitute the vegan mayonnaise with 4 ounces of silken tofu and season to taste with salt. You can whisk this together and it get's fairly smooth but for smoothest results, I recommend blending. This method is also less flavorful (it has far less fat!) and has a more pronounced dijon mustard flavor. I personally prefer the mayonnaise version, but this is a great low fat, WFPB option!
