Step 1:  Prepare the simple syrup by mixing together the cane sugar and warm water. Allow the sugar to dissolve completely.

Step 2:  Add the fresh mint leaves and stems to a cocktail shaker or to a jar with a lid.

Step 3:  Pour the simple syrup over the mint leaves and stems.

Step 4:  Muddle the mint and simple syrup together until the mint is fragrant and lightly crushed.

Step 5:  Add in the dark rum, lime juice and ice and shake for 30 seconds to combine.

Step 6: Strain over ice between two glasses.
