Step 1: Rehydrate soy curls. Whisk together the vegan peanut sauce ingredients and set aside.

Step 2:  Pan fry the rehydrated soy curls, minced garlic, shredded cabbage, shredded carrots, and peanut sauce.

Step 3:  Add in the drained udon noodles.
