As a cream of mushroom soup connoisseur, I was eager to try a vegan version. Making this soup was easy and the result was so rich and creamy, it met all of my expectations!

INGREDIENTS

Step 1:  Saute the onions and garlic together for 3-4 minutes in a splash of broth until soft and fragrant.

Step 2:  Add the sliced mushrooms, white wine vinegar and pepper and saute for an additional 5 minutes, or until mushrooms are cooked down and darkened in color.

Step 3:  Add the cashew butter, vegetable broth and milk and stir.

Step 4:  Bring to a simmer, then add the lid and simmer on low for 5 minutes.

Step 5:  Using an immersion blender or regular blender, blend soup until smooth.

Step 6:  Serve immediately while hot!
