Vegan Potato Corn Chowder

What You'll Need

1. Add the cashews, plant milk, broth, nutritional yeast, lemon juice and miso paste to a blender.

2. Blend until completely smooth and frothy!

3. Saute the diced onion in a large pot until soft.

4. Add in the potatoes, corn, kale, and spices.

5. Pour over the blended cashew mixture.

6. Give it a good stir and simmer for 25-30 minutes

Serve immediately with your favorite toppings!
