Place everything except the vegetable broth and BBQ sauce together in a large bowl or ziplock bag overnight. Seal tightly.
The next morning, dump the marinated jackfruit into the slow cooker along with the vegetable broth. Stir to combine.
Cook on low for 6-8 hours.
Within the last 30 minutes of cooking, stir in 1 cup of sweet BBQ sauce of choice.
Serve on buns with coleslaw, additional bbq sauce, and pickles.
Meal Prep Instructions
