Jackfruit Pulled Pork Sandwiches

  • 3 cans young green jackfruit drained, rinsed, and shredded ($5.97)
  • 2 large yellow onion sliced ($1.20)
  • 4 cloves garlic minced ($0.24)
  • 2 tablespoons tomato paste ($0.24)
  • 1 tablespoon maple syrup ($0.26)
  • 1 tablespoon apple cider vinegar ($0.11)
  • 1 tablespoon chili powder ($0.30)
  • 1 tablespoon coriander ($0.30)
  • 1 tablespoon smoked paprika ($0.30)
  • 1 tablespoon onion powder ($0.30)
  • 2 teaspoons kosher salt ($0.08)
  • 1 ½ teaspoons ground cumin ($0.15)
  • 1 teaspoon black pepper ($0.04)
  • 2 tablespoons steak sauce ($0.78)
  • 1 cup vegetable broth ($0.08)
  • 1 cup sweet vegan BBQ sauce ($0.99)

For serving

Instructions

  • Place everything except the vegetable broth and BBQ sauce together in a large bowl or ziplock bag overnight. Seal tightly.
  • The next morning, dump the marinated jackfruit into the slow cooker along with the vegetable broth. Stir to combine.
  • Cook on low for 6-8 hours.
  • Within the last 30 minutes of cooking, stir in 1 cup of sweet BBQ sauce of choice.
  • Serve on buns with coleslaw, additional bbq sauce, and pickles.

Meal Prep Instructions

  • Place all of the ingredients, except broth, BBQ sauce, and ingredients for serving, in a gallon-sized ziplock bag. Seal tightly removing as much excess air as possible. Refrigerate for up to 5 days.
  • When ready to cook, dump contents of bag into slow cooker, add broth, and cook as usual. Within the last 30 minutes of cooking, stir in 1 cup of sweet BBQ sauce of choice.

Freezer Instructions

  • Place all of the ingredients, except broth, BBQ sauce, and ingredients for serving, in a gallon-sized ziplock bag. Seal tightly removing as much excess air as possible. Freeze for up to 3 months.
  • When ready to cook, dump contents of bag, frozen, into slow cooker, add broth, and cook as usual. Within the last 30 minutes of cooking, stir in 1 cup of sweet BBQ sauce of choice.
