Beans are some of the cheapest, most nutritious foods available, especially when you learn how to cook dry black beans in the Instant Pot.

They’re loaded with antioxidants, dietary fiber, plant-based protein (1 cup of cooked black beans has 15 grams of protein!), folate, copper, thiamine, manganese, magnesium, iron, phosphorus, and more.

There's a reason they're at the top of my pantry essentials checklist!

And while you know I prefer to cook my own beans from scratch for the ultimate savings and flavor, canned beans are still one of my Costco staples I keep in my long term food storage for emergencies. They're fully cooked and easy to eat straight from the can – convenient when you're short on time or have no power.

If you don't have a Costco membership, try picking them up at one of my Top 10 Cheapest Grocery Stores – in 2024, I can still find canned beans for as low as $0.88 per can!

  1. While I really appreciate the work you’ve done to compile these, and that your shared them, I’d like to note that they’re not all vegan. Disappointing.

    1. This is a vegetarian and vegan collection of recipes. The vegetarian recipes included can almost always be easily made vegan. We eat plant-based 99% of the time at home (my husband is allergic to dairy), and I use vegetarian recipes all the time with minor tweaks.
