By making a conscious effort to repurpose our leftovers every week, we're not only saving money, but reducing food waste. Kinder to our wallets and the planet!

With just a little ingenuity, you can turn leftover taco meat into a fresh, brand new dinner! Below I've included 30 ideas to use as inspiration. All of them will work with any type of taco meat you have on hand, including my Cheaper Vegan Ground Beef Substitute!

Or, if you don't have time to repurpose your taco meat, stick it in the freezer to prolong it's freshness.

How to Freeze Leftover Taco Meat

  1. Let it cool. If you haven't already, allow the taco meat to cool completely to avoid excess moisture and ice crystals forming in the freezer.
  2. Portion it out: Divide the meat into meal-sized portions. This way, you can thaw exactly what you need for future meals and avoid waste.
  3. Store in freezer-safe bags: Place the portioned meat into freezer-safe bags, removing as much air as possible to prevent freezer burn. Label each bag with the date and contents.
  4. Freeze flat: Lay the bags flat in the freezer so they stack easily and thaw quickly when needed.
  5. Use within 3-4 months: For the best flavor and texture, try to use your frozen taco meat within 3 to 4 months. When youโ€™re ready to use it, simply thaw it overnight in the fridge or quickly reheat it in a skillet.

Leftover Taco Meat Recipes to Try

How long is leftover taco meat good for?

Leftover taco meat will stay fresh in the refrigerator for about 3 to 4 days when stored properly in an airtight container. Be sure to refrigerate it within two hours of cooking to prevent bacteria from growing.

If youโ€™re nearing the end of that timeframe and donโ€™t plan to use it right away, freezing the meat is a great option to extend its shelf life. When in doubt, give it a quick smell and check the textureโ€”if it seems off, itโ€™s better to be safe and discard it.
