Thisย lemon tahini dressingย is quick to make, uses minimalย ingredients, and is delicious drizzled overย kale salads,ย grain bowls, or spread on wraps!

Lemon tahini dressing in a jar.

Making homemade sauces and dips is one of my favorite ways to instantly lower my grocery bill without having to spend a lot of time in the kitchen. Unlike more time consuming recipes like cooking beans from scratch or making homemade pie crust, this dressing is ready to go in less than 5 minutes flat!

With just a handful of pantry staples and a quickย whiskย or blend, youโ€™ll have a creamy, tangy dressing thatโ€™s versatile enough for salads,ย grain bowls, roastedย veggies, and more.ย

Ingredientsย You'll Need

Ingredients you need for lemon tahini dressing measured and labeled.
  • Tahini: Creates the creamy, nutty foundation of the dressing, bringing all the flavors together. For the best results, use smooth, runny tahini and stir it well if it has separated.
  • Olive oil: Adds richness and helps emulsify the dressing for a perfectly smooth texture. Use a good-quality extra-virgin olive oil for the best flavor, or adjust the amount if you prefer a lighter consistency.
  • Water: Helps to thin the dressing to your desired consistency, making it easy to drizzle over salads or vegetables. Add it gradually, a little at a time, until the texture is just right.
  • Fresh lemon juice: Adds a bright, tangy flavor that balances the nuttiness of the tahini and the richness of the olive oil. Use freshly squeezed lemon juice for the best flavor, and consider adding lemon zest for extra citrusy notes.
  • Dijon mustard: Enhances the flavor with a subtle tang and helps bind the ingredients together for a smooth dressing. Opt for smooth Dijon for a uniform texture, or substitute with yellow mustard for a slightly milder flavor.
  • Maple syrup: Adds a touch of sweetness to balance the tanginess of the lemon juice and the earthy tahini. Use the full amount for a sweeter dressing, or reduce it slightly if you prefer a less sweet option. Honey is a fantastic alternative.
  • Salt: Adjust to taste!

Optional Add-ins

  • Garlic: Add 1 minced garlic clove for a garlicky kick. Or if you have it, a few cloves of Roasted Garlic!
  • Toasted sesame oil: Add 1 teaspoon toasted sesame oil for a richer, nuttier flavor that complements the tahini.
  • Lemon zest: To intensify the citrus flavor.
  • Cayenne pepper: Add up to 1/2 teaspoon of cayenne pepper for fiery kick.
  • Fresh dill: Complements the lemon and is perfect for Mediterranean salads.

How to Make Lemon Tahini Dressing

Making this dressing from scratch could not be easier.ย

Lemon tahini dressing ingredients in bowl together.

Simply add all of theย ingredientsย to a 16 ounce mason jar orย bowlย andย whiskย together until well combined.ย

Tasteย and adjust theย flavorsย and consistency to suit your ownย tasteย buds. Enjoy!

How to Make Sure Your Dressing is Not Bitter

The key to avoidingย bitternessย in any tahini dressing is using a high-quality tahini made from hulledย sesame seeds, which are naturally smoother and milder inย flavor.ย

I recommendย Soom Tahiniย for its consistently creamy texture and balancedย taste, free from theย bitternessย that can ruin a dressing (not sponsored, I just love it!). Be sure to stir your tahini thoroughly before using to blend the natural oils and solids evenly for the best results.ย

Quality matters, and a great tahini ensures your dressing is perfectly smooth and flavorful every time.

Uses for this Dressing

My favorite way to enjoy thisย Lemon Tahini Dressingย is drizzled on my favorite fall Shaved Brussels Sprouts Salad or drizzled on my favorite cabbage steaks, but it would be a greatย salad dressingย for virtually any green salad,ย grain bowl, orย roastedย veggies.ย

You can even use it as aย dipย or spread for wraps and sandwiches. The sky is really the limit!ย

Frequently Asked Questions

How do you know if tahini has gone bad?

To tell if tahini has gone bad, check for a sour or rancid smell, a bitter or offย taste, and changes in texture or appearance, such as clumping or discoloration.ย

Fresh tahini should have a smooth, nuttyย flavorย and a mild aroma. To keep it fresh longer, store it in a cool, dry place, refrigerate after opening, and always seal the jar tightly.

How to fix split tahini dressing?

Once refrigerated, thisย lemon tahini dressingย may separate. This is natural! To fix it,ย whiskย the dressingย ingredientsย vigorously or blend it with a small amount of water until smooth again.

How long does this tahini dressing last in the fridge?

This homemade dressing will last for up to 1 week in the refrigerator when stored in an airtight jar, such as a Mason jar or Weck jar.ย
